For those who have never tried to a particular carrot cake recipe already assumes that it’s no longer a dessert. Well, this isn’t true. This kind of cake is tasty, and totally delectable. If you think that it’s something that can ruin your diet, well, my carrot cake recipe will definitely help you with your diet, most especially if you’re ketogenic.

So, what is Keto Diet? In layman’s term, it is the type of diet in which you trick your body about using your very own body fat as the main source of energy, instead of carbohydrates. This kind of diet is now getting more and more popular, as it is proven to be effected in losing fat in the most efficient manner. In order to get your body in such state, you need to eat food high in fat, low in protein, but definitely no carbs. The ratio needs to be about 80% of fat and 20% of protein.

Now, my carrot cake recipe is modified to fit the ketogenic diet. Actually, if you’re looking for a healthier option of carrot cake, while of course, having your taste buds enjoy such dessert, here’s what you should know.

What you’ll need:

  • ¾ cup dairy-free butter, softened
  • ¾ cup Erythritol
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 ½ cup blanched almond flour
  • 2 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 2 teaspoon gluten-free baking powder
  • 2 ½ cups grated carrots
  • 1 ½ cup pecans, chopped

Cream Cheese Frosting

  • 2 tablespoons butter, softened
  • 4 ounce cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • ½ cup powdered erythritol

Directions of Making Ketogenic Carrot Cake Recipe

Cream Cheese Frosting

  1. Using a hand mixer, beat the butter and cream cheese together until it’s light and fluffy.
  2. Once the consistency has been reached, mix in the vanilla and sweetener.
  3. Add heavy cream to get the desired creaminess.

  1. First things first, you will have to pre-heat the oven to 350ºF.
  2. Get your round cake pans and line it with two 9 inches parchment paper. Don’t forget to grease the sides and bottoms to avoid the cake from sticking into the pan.
  3. In a separate bowl, cream the erythritol and butter together until light and fluffy. Mix in the vanilla extract, then the eggs, one at a time and set aside.
  4. Get another bowl and mix in all the dry ingredients, stir into the bowl of the wet ingredients.
  5. The next thing you’ll have to do is mix in the grated carrots and then fold a cup of chopped pecans, leave half a cup for garnishing.
  6. Transfer the batter on two prepared baking pans and bake for about 35 minutes. When you feel that the top is spring-y, it only means that the batter is baked into perfection.
  7. Once done, before transferring the cakes into the wire rack, let it cool in the pan for 10 good minutes.
  8. As soon as the cake has cooled down, place the first layer on the cake stand and frost it. After then, add the top layer and frost it again and top it off with chopped pecans.

This carrot cake is absolutely low in carbohydrates, which can be very beneficial to your keto diet. What’s good about this carrot cake recipe is that, it also tastes awesome!
