Pumpkin Cream Cheese Crumb Cake Recipe


Crumb Topping

  • ¾ th cup of all-purpose flour
  • Half a cup light brown sugar
  • One tsp. of cinnamon
  • Six tbsp. of unsalted butter

Cream Cheese Filling

  • Two ¼ cups of cream cheese
  • ¼ cup of sugar
  • One large egg
  • One tsp. of vanilla extract

Pumpkin Cake

  • One and a half cups of all-purpose flour
  • One tsp. of baking powder
  • Half tsp. of baking soda
  • One tsp. of pumpkin pie spice
  • Half tsp. of cinnamon
  • Half tsp. of salt
  • One cup of pumpkin puree
  • Half cup of vegetable oil
  • Half cup of brown sugar
  • ¼ cup of sugar
  • Two eggs
  • One tsp. of vanilla extract

Instructions For Pumpkin Cream Cheese Crumb Cake

Step- 1: Initially, you need to set all your ingredients handy. Make sure to preheat the microwave oven to 350 degrees F. 

Step- 2: Make The Crumb Topping

Take a bowl and add flour, cinnamon, and brown sugar. Mix them well and add butter. Blend it with the help of an electric blender or food processor. Ensure there are no crumbs in the mixture.  Now, let it cool down for at least 15 minutes. 

Step- 3: Make The Cream Cheese Filling

Take a medium-sized bowl and beat the cream cheese until it gets a smooth texture. Now, add sugar and mix it well with the help of an electric mixer. Then again, add eggs and vanilla extract and combine them. Keep this bowl aside. 

Step- 4: Make The Pumpkin Cake

Take a large bowl. Add the flour, baking powder, baking soda, pumpkin pie, cinnamon, and salt in the bowl and mix them together. Take another bowl, mix the pumpkin puree with oil, and brown sugar. Then again, add vanilla extract and eggs in it. Mix it until combines together. 

Now, pour the cake batter in a non-stick pan and spread evenly. After one layer is added, add the cheesecake filling on top of the cake batter and spread it evenly. Next, spread the left cake batter on top cream cheese filling.

Now, remove the crumb topping from the refrigerator and spread on the cake batter evenly. Bake it for at least 50 to 55 minutes. Then again, test whether it baked or not with the help of a toothpick. 

Next, remove it from the oven and transfer it on the cake decoration plate after cooling down. Now, your cake is ready to serve.
